{"id":189,"date":"2016-05-06T08:47:11","date_gmt":"2016-05-06T06:47:11","guid":{"rendered":"http:\/\/wp1.fredptitgars.net\/index.php\/2016\/05\/06\/creme-mousseline-au-chocolat\/"},"modified":"2016-05-06T08:47:11","modified_gmt":"2016-05-06T06:47:11","slug":"creme-mousseline-au-chocolat","status":"publish","type":"post","link":"https:\/\/fredptitgars.ovh\/?p=189","title":{"rendered":"Creme mousseline au chocolat"},"content":{"rendered":"<p><strong>Ingr\u00e9dient:<\/strong><\/p>\n<p>100 g de sucre<\/p>\n<ul>\n<li> 40 g de poudre \u00e0 cr\u00e8me<\/li>\n<li> 1  jaunes d&rsquo;oeufs<\/li>\n<li> 1 gousse de vanille<\/li>\n<li> 500 ml litre de lait<\/li>\n<li> 150 gr de chocolat noir de qualit\u00e9 finement r\u00e2p\u00e9<\/li>\n<li> 270 gr de beurre \u00e0 temp\u00e9rature ambiante <\/li>\n<\/ul>\n<p><strong>Recette:<\/strong><br \/>\n Porter le lait \u00e0 \u00e9bullition.<\/p>\n<p>Pendant ce temps, fouetter ensemble l&rsquo;oeuf, les jaunes et les sucres jusqu&rsquo;\u00e0 l\u00e9ger blanchiment puis int\u00e9grer la poudre \u00e0 cr\u00e8me.<\/p>\n<p>Verser sur cette pr\u00e9paration un tiers voire la moiti\u00e9 du lait chaud en m\u00e9langeant puis reverser le tout dans la casserole contenant le reste du lait et laisser \u00e9paissir la cr\u00e8me sur feu mod\u00e9r\u00e9 sans cesser de touiller.<\/p>\n<p>Hors du feu, incorporer le chocolat puis un tiers du beurre \u00e0 l&rsquo;aide du fouet.<\/p>\n<p>Filmer au contact puis r\u00e9server \u00e0 temp\u00e9rature ambiante jusqu&rsquo;\u00e0 complet refroidissement.<\/p>\n<p>D\u00e9tendre la cr\u00e8me au fouet puis incorporer le beurre restant  en trois fois.
